Zucchini & langoustine spaghetti

INGREDIENTS
  • Frozen langoustines
  • Zucchini
  • Spaghetti
  • Garlic
  • Chili flakes
  • Basil
  • Olive oil
  • Parmesan cheese
  • Coarse sea salt
  • Pepper
RECIPE
  • Defrost the langoustines in hot tap water
  • Bring some salted water to a boil and cook the pasta for 1-2 minutes less than the recommended time. Keep some pasta water on the side to add to the sauce
  • Cut the zucchini into thin slices. Put them on a baking sheet, season with salt, pepper and rosemary. Let it cook in the oven for 10-15 min at 180°C (or until they’ve browned a little bit)
  • Chop some garlic and let it simmer in lot of olive oil in medium heat. Add chili flakes, salt and pepper to the oil. Once the oil is hot and the garlic is cooked (not browned) add the langoustines. Let this simmer until the langoustines are cooked
  • Grate a lot of parmesan cheese
  • Add the pasta to the pan along with the parmesan cheese and a cup of pasta water. Let this cook on high heat until and emulsion is formed. Add more parmesan, salt and pepper if needed
  • Plate the pasta and add the grilled zucchini. Top it of with fresh basil
