Gazpacho & watermelon salad

INGREDIENTS
Gazpacho

  • Whole tomatoes
  • Red bell pepper
  • Garlic
  • Red onion
  • Bread
  • Cucumber
  • Salt & pepper
  • Olive oil 

Watermelon salad

  • Watermelon
  • Cucumber
  • Red onion
  • Feta
  • Mint
  • Salt & pepper

RECIPE

  • Grill a whole red bell pepper in the oven until the exterior is black. Put it in a sealed container and let it rest & cool. Peel of the skin once the bell pepper has cooled of and cut out the seeds
  • Score a small ‘x’ in the bottom of the tomatoes. Put them in boiling water for 30-60 seconds or until the skin start to peel back. Strain the tomatoes and let them cool in a container with ice water. Peel of the skin
  • Blend the tomatoes, bell pepper, garlic, onion, 1 slice of bread, salt, pepper and olive oil until a smooth consistency is reached. Let this cool in the freezer
  • Cut watermelon, cucumber and red onion for the salad. Add feta, mint, salt, pepper and olive oil
  • Cut some cucumber, tomatoes and red bell pepper as garnish for the gazpacho
  • Toast another slice of bread. Cut it into pieces and cook it in some olive oil with salt and pepper
