Vermicelli & minced meat stir fry

INGREDIENTS
  • Minced chicken
  • Bimi broccoli
  • Shiitake mushrooms
  • Spinach
  • Angel hair noodles
  • Ginger
  • Garlic
  • Scallions
  • Chili flakes
  • Mint
  • Cilantro
  • Fish sauce
  • Lime
  • Soy sauce
  • Sesame oil
  • Granulated sugar
  • Salt & pepper
  • Olive oil
RECIPE
  • Heat up some olive oil, add chopped ginger and garlic. Let this simmer on medium heat (make sure the garlic does not brown)
  • Clean the bimi and place them on an oven tray. Drizzle some olive oil on top and season with salt and pepper. Let this cook in the oven for 15-20 min at 180°C
  • Add the minced chicken to the pan and let this cook. Cut up some shiitake mushrooms and add this to the pan as well
  • Boil some water. Turn of the heat and let the noodles sit in the water, drain them when they’re cooked
  • Season your minced meat. Add fish sauce, soy sauce, sesame oil, lime and sugar to taste
  • Add raw spinach and toss until it’s cooked
  • Add the noodles and the bimi and mix everything. Season one last time
  • Top it of with some mint, cilantro, scallions and chili peppers
