Heat up some olive oil, add chopped ginger and garlic. Let this simmer on medium heat (make sure the garlic does not brown)
Clean the bimi and place them on an oven tray. Drizzle some olive oil on top and season with salt and pepper. Let this cook in the oven for 15-20 min at 180°C
Add the minced chicken to the pan and let this cook. Cut up some shiitake mushrooms and add this to the pan as well
Boil some water. Turn of the heat and let the noodles sit in the water, drain them when they’re cooked
Season your minced meat. Add fish sauce, soy sauce, sesame oil, lime and sugar to taste
Add raw spinach and toss until it’s cooked
Add the noodles and the bimi and mix everything. Season one last time
Top it of with some mint, cilantro, scallions and chili peppers
