Traditional Turkish eggs are made with poached eggs. Since these are pretty hard to perfect I opted for a quicker and easier fried egg instead. Enjoy!
INGREDIENTS
- Eggs
- Greek yoghurt
- Garlic
- Paprika powder
- Za'atar
- Parsley
- Tomato paste
- Olive oil
- Salt & pepper
RECIPE
- Heat up olive oil in a small pan. Keep it warm on medium heat. Add minced garlic, paprika powder, tomato paste (not too much), chili flakes and za’atar. Stir until fragrant
- Pour the oil in a small glass and keep it for later
- Use the same pan (no need to clean it) to cook the eggs. Turn up the heat and crack the eggs in the pan. Season with some salt & pepper
- Mix the greek yoghurt with some lime zest, lime juice, salt & pepper. Spread this on a plate
- Toast some bread
- Put the cooked eggs on the greek yoghurt and drizzle the oil on top
- Top this off with some parsley and extra za’atar
