Thai beef salad

INGREDIENTS
  • Beef
  • Angel hair noodles
  • Sugar snaps
  • Cucumber
  • Cherry tomatoes
  • Radish
  • Spring onion
  • Cilantro
  • Mint
  • Soy sauce
  • Ginger
  • Garlic
  • Rice vinegar
  • Sesame oil
  • Fish sauce
  • Lime
  • Chili flakes
  • Sugar
  • Olive oil
RECIPE
  • Marinate the beef in a soy sauce, rice vinegar and sesame oil mixture. Add grated ginger, grated garlic and chilli flakes. Let this sit for 1-2 hours
  • Boil water in two separate pots. Use one to blanch the sugar snaps. Drain them and let them cool
  • Use the other pot of boiling water to cook the angel hair noodles. Take the water off the heat once it’s boiling and add the noodles. Let them sit until they’re fully cooked
  • Make the sauce: juice some lemons, add a generous amount of fish sauce, a lot of sugar, grated ginger, cut up garlic and chilli flakes
  • Cook the beef until it’s medium rare. Make sure to add Let it sit in tin foil for 10 min after you take it off the heat and cut it into thin slices
  • Add the rest of the marinade to a pan. Let this simmer until it start to thicken. Take it of the heat and stir the beef in the marinade
  • Cut and mix all of the veggies with the noodles. Add some sauce, cilantro and mint
