Burrito bowl

INGREDIENTS

  • Beef
  • Chicken
  • White rice
  • Cherry tomatoes
  • Canned corn
  • Red onion
  • Garlic
  • Cilantro
  • Taco or fajita spice mix
  • Tajin
  • Chili flakes

RECIPE

  • Cut onion, red bell pepper and garlic. Devide this in two and cook it in two separate pans (one for the chicken and one for the beef). Cook this in olive oil on medium heat until tender. Season with salt, pepper and taco spices
  • Cut the chicken and beef into thin strips. Add these to their respective pans and cook in high heat. The beef doesn’t need a long time to cook so you can turn off the heat once it has browned. Let the chicken simmer on medium-low heat. Taste both and add more spices if needed
  • Cut cherry tomatoes into smaller pieces and add cilantro, spring onion, lime juice, chili flakes, salt and pepper to taste
  • Rinse the canned corn and add cilantro, lime juice and tajín if you have some, otherwise you can add chili flakes
  • Cook the rice and drain it
  • For the dressing mix avocado, sour cream, lime juice, cilantro, salt & pepper
  • Assemble your burrito bowl and top it of with some spring onion and dressing
