INGREDIENTS
- Zucchini
- Surimi
- Flour
- Breadcrumbs
- Egg
- Black rice noodles
- Cucumber
- Red bell pepper
- Carrot
- Spring onion
- Cilantro
- Sesame oil
- Soy sauce
- Salt
- Pepper
- Chili flakes
- White granulated sugar
- Lime
RECIPE
- Put chopped zucchini and the surimi in a blender. Pulse this until fine pieces are formed (not too much!)
- Add 1 egg, a tablespoon of sesame oil, the breadcrumbs and flour. Add more flour or breadcrumbs if the mixture is too wet. Season with salt, pepper and chili flakes
- Cook the noodles in boiling water. Drain them and let them cool
- Cut the vegetables (cucumber, carrot & red bell pepper). Mix this with the juice of 1/2 lime, 2 tablespoons of sugar, 2 tablespoons of soy sauce and 1 tablespoon of sesame oil. Add chopped cilantro and mix. Taste and add some more sugar, lime,... if needed
- Heat up a pan with olive oil. Form the burgers from the zucchini mixture and cook them in the pan
- Add the noodles to the vegetables and add some more seasoning if needed. Top it of with some spring onion
