Surimi & zucchini burgers w/ a rice noodle salad

INGREDIENTS

  • Zucchini
  • Surimi
  • Flour
  • Breadcrumbs
  • Egg
  • Black rice noodles
  • Cucumber
  • Red bell pepper
  • Carrot
  • Spring onion
  • Cilantro
  • Sesame oil
  • Soy sauce
  • Salt
  • Pepper
  • Chili flakes
  • White granulated sugar
  • Lime

RECIPE

  • Put chopped zucchini and the surimi in a blender. Pulse this until fine pieces are formed (not too much!)
  • Add 1 egg, a tablespoon of sesame oil, the breadcrumbs and flour. Add more flour or breadcrumbs if the mixture is too wet. Season with salt, pepper and chili flakes
  • Cook the noodles in boiling water. Drain them and let them cool
  • Cut the vegetables (cucumber, carrot & red bell pepper). Mix this with the juice of 1/2 lime, 2 tablespoons of sugar, 2 tablespoons of soy sauce and 1 tablespoon of sesame oil. Add chopped cilantro and mix. Taste and add some more sugar, lime,... if needed
  • Heat up a pan with olive oil. Form the burgers from the zucchini mixture and cook them in the pan
  • Add the noodles to the vegetables and add some more seasoning if needed. Top it of with some spring onion
