Stuffed veggies three ways

INGREDIENTS

  • Zucchini
  • Ricotta cheese
  • Spinach
  • Sun-dried tomatoes
  • Sage
  • Tomatoes
  • Minced meat, onion
  • Yellow bell pepper
  • Quinoa
  • Feta cheese
  • Cilantro
  • Mint
  • Salt & pepper
  • Olive oil ⠀

RECIPE

  • Preheat the oven to 180°C
  • Mix some minced meat with chopped onion, salt and pepper. Hollow out the tomato and put the mixture inside
  • Mix ricotta cheese with finely chopped spinach, chopped sun-dried tomatoes and sage. Season with salt and pepper. Hollow out the zucchini and add the ricotta mixture
  • Cook some quinoa
  • Mix the quinoa with chopped yellow bell pepper, feta cheese, cilantro and mint. Season with salt & pepper. Hollow out other the yellow bell pepper and put the quinoa mixture inside
  • Cook the three in the oven for at least 20 min
  • Make a tomato sauce with chopped tomatoes, onion, garlic, olive oil salt & pepper
