Stuffed sweet potato

INGREDIENTS
- Sweet potato
- Bacon
- Zucchini
- Yellow bell pepper
- Cherry tomatoes
- Feta cheese
- Chives
- Parsley
- Chilli flakes
- Salt & pepper
- Olive oil
RECIPE
- Cook the bacon in a pan with olive oil
- Chop the bell pepper, zucchini and tomatoes. Add this to the bacon. Season with salt, pepper, chilli flakes and oregano
- Poke a few holes in the top of a sweet potato. Put in the microwave until it’s cooked (7-10 min)
- Cut open the sweet potatoes. Add the filling and top it off with feta, parsley and chives
