Sticky soy sauce meatballs

INGREDIENTS
  • Minced meat
  • Spring onion
  • Cucumber
  • Sesame oil
  • Soy sauce
  • Sesame seeds
  • Chilli flakes
  • Fish sauce
  • White granulated sugar
  • Ginger
  • Garlic
  • Paprika powder
  • Olive oil
RECIPE
  • Make the meatball mixture. Mix the minced meat with spring onion, sesame seeds, sesame oil, chilli flakes, salt and pepper
  • Cut the cucumber into really thin slices and mix them with lemon juice, fish sauce, sesame seeds, lemon zest, chilli flakes, granulated sugar and salt
  • Cook the meatballs in butter on all sides. Lower the heat and keep them in the pan
  • Mix a cup of soy sauce with a tablespoon of sesame oil, one tablespoon of paprika powder, one tablespoon of sesame seeds, one teaspoon of chilli flakes, 1 tablespoon of corn starch, 1-2 cloves of garlic and a big piece of grated ginger
  • Cook this mixture in a pan on medium heat until it starts to thicken. Taste and add sugar if it’s too salty
  • Add the cooked meatballs to the soy sauce mixture and mix everything
  • Cook the rice according to the instructions on the packaging
  • Top everything off with more spring onions and sesame seeds
