Cover the ribs with a small amount of olive oil and start baking them in a 140°C oven for about 2h
Mix 1 cup of soy sauce, 2 tablespoons of sesame oil, 1 tablespoon of rice vinegar, 3-4 tablespoons of sugar and a tablespoon of corn starch
Grate a big piece of ginger and zest a whole lime. Chop two garlic cloves into small pieces and add everything to the soy sauce mixture
Heat up a pan and add the mixture on medium heat. Slowly heat this up and stir it continuously. Cook it until it has a thick consistency. Taste it and add more sugar if needed
Take out the ribs and put them in the pan. Toss them around in the sauce and make sure everything is covered
Put the ribs back in the oven dish and grill them for 5 minutes on super high heat
Garnish with some cilantro, spring onion, sesame seeds and red chili. Serve with pieces of lime
