Soy sauce noodles w/ tofu

INGREDIENTS
  • Angel hair noodles
  • Firm tofu
  • White onion
  • Soy sauce
  • Vegetable stock
  • Sesame oil
  • Ginger
  • Pointed red bell pepper
  • Snap peas
  • Cilantro
  • Chili flakes⠀⠀
RECIPE
  • Chop up the onion and ginger. Cook them in olive oil on medium high heat until fragrant but not browned
  • Add the pointed red pepper and let this simmer. Add water, soy sauce, vegetable stock, sesame oil and lime zest
  • Cut the tofu into small cubes and let the liquid drain out by pressing them down with a kitchen towel
  • Cook the tofu in a hot pan with olive oil until the cubes are brown and crispy
  • Make a mixture of soy sauce, grated ginger, sesame oil and chili flakes. Add this to the tofu cubes an let them simmer for 10-15 min in this mixture
  • Add the angel hair noodles and snap peas to the broth. Let this simmer until the noodles are ready
  • Add everything to a bowl, add the tofu and top it of with some fresh cilantro
