Creamy salmon pasta

INGREDIENTS

  • Smoked salmon 
  • Broccoli
  • Boursin cheese
  • Cream
  • Spaghetti 
  • Shallot
  • Parmesan cheese
  • Flat parsley 
  • Olive oil
  • Salt & pepper

RECIPE

  • Chop a shallot and cook it in a pan with olive oil until fragrant (no browning)
  • Bring some water to a boil, add salt and cook the pasta
  • Break up a head of broccoli into small florets. Add the to the pan. Cook them on high heat with about 1 cup of water
  • Add cream to the pan and lower the heat to medium. Add boursin. Stir until melted and season to taste with salt & pepper. Let this simmer until the broccoli is cooked
  • Remove about half of the sauce from the pan and mix it with a stand mixer (optional). Add it back to the pan
  • Drain the pasta and add it to the sauce
  • Garnish with smoked salmon and flat parsley
