INGREDIENTS
- Salmon
- Broccoli
- Boursin
- Orzo
- Flat parsley
- Shallot
- Thyme
- Oregano
- Vegetable stock
- Olive oil
- Salt & pepper
RECIPE
- Cut the salmon filet into big cubes. Cook them in a skillet with olive oil, salt & pepper. Remove from the pan once browned on all sides
- Cut a shallot into small pieces and add them to the pan. Add the orzo to this pan as well and mix with the olive oil and shallots. Add thyme and oregano
- Add vegetable stock to the pan. Add this in small amounts at a time. Keep stirring and adding vegetable stock until the orzo is cooked. Cook this on medium heat
- Cut the broccoli into small pieces and add it to the cooking orzo. The broccoli will cook in the vegetable stock as well
- Once the orzo is almost cooked stop adding vegetable stock and let is simmer to evaporate the leftover water. Add a tablespoon of boursin to the pan
- Add the salmon and season with salt & pepper. Top if off with some flat parsley
