Asparagus 'a la flamande'

INGREDIENTS

  • White asparagus 
  • Smoked salmon 
  • Egg
  • Parlsey
  • Butter
  • Salt & pepper

RECIPE

  • Peel the asparagus and cut of the hard piece at the base
  • Boil and egg in a pot. Cook this for at least 10 min. Drain the water and let the egg cool in a pot of cold water. Peel it once cooled enough to hold
  • Bring another pot water to a boil, add salt and boil the asparagus until tender but not mushy (I like it when the still have a bite to them)
  • Melt some butter and turn of the heat once fully melted. Add chopped parsley
  • Drain the asparagus and let the dry on a kitchen towel or kitchen paper
  • Cut the salmon
  • Put the asparagus on a plate and drizzle the parsley butter on top and add the salmon
  • With a fine grater, grate the eggs on top. Finish with some freshly grated pepper
