Sage & meatballs pasta

INGREDIENTS

  • Minced meat
  • Zucchini
  • Sage
  • Linguine
  • Pine nuts
  • Garlic
  • Pecorino cheese
  • Parmesan cheese
  • Olive oil
  • Salt & pepper

RECIPE

  • Mix the minced meat with chopped sage and pine nuts. Roll them into small meatballs and cook this in a pan with olive oil
  • Bring some water to a boil and cook the pasta. Drain it 1 min before recommended time. Save some pasta water in a cup
  • Cut the zucchini into small cubes. Take the meatballs from the pan and add the zucchini. Cook the zucchini on high heat. Add minced garlic and season with salt & pepper
  • Grate a handful of parmesan cheese and a handful of pecorino cheese
  • Put the meatballs back in the pan and add the pasta. Add the cheeses, olive oil and some pasta water. Mix everything on medium-high heat until emulsified. Top it of with some extra sage and fresh pepper
