Roasted salmon w/ a citrus salsa verde

INGREDIENTS

  • Salmon
  • Radishes
  • Citrus fruit: orange, lime  & grapefruit 
  • Cilantro
  • Parsley
  • Garlic
  • Onion
  • Paprika powder
  • Salt & pepper
  • Olive oil

RECIPE

  • Preheat the oven to 180°C
  • Drizzle some olive oil on the pieces of salmon. Season them with salt, pepper and paprika powder and cook this in the oven for 10 min 
  • In the mean time, make the citrus salsa verde. Finely chop garlic, onion cilantro and parsley and add lime juice, orange juice and grapefruit juice. Blend this with a stand mixer and taste to see if it needs salt & pepper
  • Cut the radishes in two. Add these to the salmon along with the salsa verde. Cook this for 10 more minutes
