Red pesto gnocchi w/ coppa

INGREDIENTS
  • Gnocchi
  • Coppa
  • Burratina
  • Sun-dried tomatoes
  • Pine nuts
  • Basil
  • Ricotta cheese
  • Spinach
  • Parmesan cheese
  • Olive oil
  • Salt
  • Pepper

RECIPE
  • Blend the spinach, sun-dried tomatoes, basil, pine nuts and ricotta. Add olive oil and season with salt and pepper
  • Cook the gnocchi. Strain them and add the sauce. Let this simmer for 1 min on medium heat. Add the coppa
  • Top it of with fresh parsley and fresh burratina
