Purple cauliflower zucchini spaghetti

INGREDIENTS

  • Purple cauliflower
  • Zucchini spaghetti
  • Burrata cheese
  • Parmesan cheese
  • Garlic
  • Shallot
  • Parsley
  • Oregano
  • Salt & pepper
  • Olive oil

RECIPE

  • Break the cauliflower into small florets. Blanch it in boiling salted water for 3 minutes
  • Mince garlic and chop a shallot. Cook these in a pan with olive oil on medium heat. Add oregano and the cauliflower. Cook until the cauliflower is tender
  • Turn up the heat and add the zucchini pasta. Cook this for 2 minutes until the zucchini is tender. Season with salt & pepper
  • Garnish with burrata and parmesan cheese. Add a drizzle of olive oil
