INGREDIENTS
- Purple cauliflower
- Zucchini spaghetti
- Burrata cheese
- Parmesan cheese
- Garlic
- Shallot
- Parsley
- Oregano
- Salt & pepper
- Olive oil
RECIPE
- Break the cauliflower into small florets. Blanch it in boiling salted water for 3 minutes
- Mince garlic and chop a shallot. Cook these in a pan with olive oil on medium heat. Add oregano and the cauliflower. Cook until the cauliflower is tender
- Turn up the heat and add the zucchini pasta. Cook this for 2 minutes until the zucchini is tender. Season with salt & pepper
- Garnish with burrata and parmesan cheese. Add a drizzle of olive oil
