Pumpkin (I usually buy frozen cubes to avoid all the chopping)
Fresh spinach
Raisins
Flat parsley
Shallot
Chicken stock cube
Parmesan cheese
Lemon
Chicken seasoning
Salt & pepper
RECIPE
Cut the chicken. Mix it with a little bit of olive oil and chicken seasoning. Cook it in a hot pan with butter
Chop a shallot and add in to a pot with olive oil. Cook this on medium heat until fragrant
Make the chicken broth using water and a chicken stock cube
Add dry orzo to the pot with the onions. Stir it until it’s coated in the olive oil from the pot
Start adding chicken stock gradually to your orzo and let it simmer on medium heat. Stir and taste regularly to see if you need to add more chicken stock
When halfway cooked, add the frozen pumpkin and spinach to the orzo
Once the orzo is cooked. Add the chicken, raisins and a handful of grated parmesan cheese and a squeeze of lemon juice. Taste and season with more salt and pepper if needed
