Pumpkin & chicken orzo

INGREDIENTS
  • Orzo pasta
  • Chicken filet
  • Pumpkin (I usually buy frozen cubes to avoid all the chopping)
  • Fresh spinach
  • Raisins
  • Flat parsley
  • Shallot
  • Chicken stock cube
  • Parmesan cheese
  • Lemon
  • Chicken seasoning
  • Salt & pepper
RECIPE
  • Cut the chicken. Mix it with a little bit of olive oil and chicken seasoning. Cook it in a hot pan with butter
  • Chop a shallot and add in to a pot with olive oil. Cook this on medium heat until fragrant
  • Make the chicken broth using water and a chicken stock cube
  • Add dry orzo to the pot with the onions. Stir it until it’s coated in the olive oil from the pot
  • Start adding chicken stock gradually to your orzo and let it simmer on medium heat. Stir and taste regularly to see if you need to add more chicken stock
  • When halfway cooked, add the frozen pumpkin and spinach to the orzo
  • Once the orzo is cooked. Add the chicken, raisins and a handful of grated parmesan cheese and a squeeze of lemon juice. Taste and season with more salt and pepper if needed
  • Top it of with some flat parsley
