Pomodoro & pesto pappardelle

INGREDIENTS
  • Pappardelle
  • Roma tomatoes
  • Tomato paste
  • Garlic
  • Arugula
  • Bacon
  • Parmesan cheese
  • Pesto
  • Bread
  • Rosemary
  • Chilli flakes
  • Salt & pepper
  • Olive oil 

RECIPE
  • Heat up some olive oil in a pan on medium-low heat. Add garlic, rosemary, chilli flakes and tomato paste. Let this simmer
  • Cut the tomatoes and add it to the pan. Let it simmer on medium heat and season with salt and pepper
  • Boil the pasta in salted water
  • Cook the bacon in a pan. Take them out put keep the pan with the bacon fat
  • Toast a slice of bread. Blend it or break it up into small pieces. Toast it for 1-2 mins in the remaining bacon fat
  • Strain the pasta and add it to the sauce. Add olive oil and parmesan cheese and stir. Add some fresh basil as well
  • Mix some pesto with a small amount of water so it becomes runnier
  • Plate the pasta. Add some pesto, bacon, croutons, parmesan cheese and arugula
