Pomodoro pasta & crispy Ganda ham

INGREDIENTS

  • Ganda ham
  • Pasta (calamarata)
  • Cherry tomatoes
  • Arugula
  • Passata (tomato sauce)
  • Shallot
  • Parmesan cheese
  • Lime
  • Rosemary 
  • Oregano
  • Basil
  • Salt & pepper
  • Olive oil 

RECIPE

  • Chop a shallot and cook it in a pan with olive oil. Cook until fragrant (not browned). Add cherry tomatoes, oregano, rosemary, salt & pepper. LEt this simmer until the tomatoes have softened. Add some passata and season more to taste. Let this simmer while you prepare the rest
  • Bring some water to a boil, add salt and cook the pasta
  • Turn on the grill in the oven. Put the ham on a baking sheet and grill it until crispy. Keep a close eye one the ham in the oven! It can burn very quickly
  • Drain the pasta and mix it with the sauce. Top it of with the crispy ham, parmesan cheese and fresh basil
  • Serve with arugula with olive oil, lime juice, parmesan cheese, salt and pepper
