Poached eggs & Ganda ham asparagus

INGREDIENTS
  • White asparagus
  • Parsley
  • Butter
  • Ganda ham block
  • Egg
  • Salt
  • Pepper
  • Butter
RECIPE
  • Peel the asparagus and chop off the hard pieces at the bottom. Boil some water, add salt and boil the asparagus until they’re cooked but still slightly firm
  • Melt some butter and lower the heat. Add chopped parsley, salt and pepper
  • Poach the eggs: bring some salted water to a slight simmer (small bubbles). Prepare a bowl of ice cold water and place each egg in a small bowl
  • Make a whirlpool in the water and calmly place the egg in the center. Let this simmer in the water for 2 min or until it’s slightly firm
  • Take the egg out of the water with a spoon and place it in the ice water. Take it out and place it on a paper towel to dry
  • Cut some Ganda ham. Put the asparagus on a plate and pour the butter on top. Add the poached eggs and Ganda ham. Season with some extra salt and pepper
