Pearl couscous salad

INGREDIENTS

  • Pearl couscous
  • Chicken stock
  • Feta cheese
  • Cherry tomatoes
  • Cucumber
  • Avocado
  • Bacon
  • Radish
  • Parsley
  • Mint
  • Greek yoghurt
  • Lime
  • Mustard
  • Salt & pepper
  • Olive oil 

RECIPE

  • Cook the couscous in chicken (or vegetable) stock till ready. Drain and let it cool
  • Cook the bacon and cut the vegetables
  • Dressing: finely chop parsley and mint. Mix with greek yoghurt, olive oil, mustard, lime, salt and pepper
