Pea & mint risotto

INGREDIENTS

  • Risotto rice
  • Frozen peas
  • Mint
  • Chicken stock
  • Parmesan cheese
  • Lime
  • Shallot
  • White wine
  • Salt & pepper
  • Butter
  • Olive oil⠀⠀

RECIPE

  • Chop a shallot and cook it in a pot with olive oil on medium heat
  • Add the risotto rice to the pot. Stir on medium heat until combined with the onions
  • Heat up some chicken stock
  • Add about a cup of white wine to the rice. Let the water evaporate and stir
  • Gradually add chicken stock to the rice. Stir consistently and add the peas halfway
  • Stop adding stock when the rice is almost cooked
  • Add finely grated parmesan, butter and fresh mint
