INGREDIENTS
- Risotto rice
- Frozen peas
- Mint
- Chicken stock
- Parmesan cheese
- Lime
- Shallot
- White wine
- Salt & pepper
- Butter
- Olive oil⠀⠀
RECIPE
- Chop a shallot and cook it in a pot with olive oil on medium heat
- Add the risotto rice to the pot. Stir on medium heat until combined with the onions
- Heat up some chicken stock
- Add about a cup of white wine to the rice. Let the water evaporate and stir
- Gradually add chicken stock to the rice. Stir consistently and add the peas halfway
- Stop adding stock when the rice is almost cooked
- Add finely grated parmesan, butter and fresh mint
