INGREDIENTS
- Mozzarella beads
- Pasta
- Cherry tomatoes
- Zucchini
- Eggplant
- Arugula
- Red pesto
- Balsamic vinegar
- Olive oil
- Salt & pepper
RECIPE
- Bring some water to a boil, add salt and cook the pasta
- Cut the zucchini and eggplant into thin slices. Cook these slices in a grill. Let them cool and mix with olive oil, a little bit of balsamic vinegar, oregano, salt & pepper
- Mix the pasta with some red pesto. Add the grilled veggies along with some chopped tomatoes, mini mozzarella balls and some arugula
