Heat up an oven-proof pan and melt some butter. Brown the chicken thighs on all sides (optional, I do this when I want extra crispy skin)
Preheat the oven to 160°C. Drizzle some olive oil on the chicken and place it in the oven for at least 20 min
In a blender, mix a handful of parsley and two handfuls of parmesan cheese. Add in olive oil, zest of a lemon and lemon juice of one lemon. Mix and season to taste with salt and pepper
Take the chicken from the oven and turn up the heat to 180°C. Put the parmesan mixture on top of the chicken thighs and add the asparagus. Cook this in the oven for 20 more minutes
