Chop an onion and garlic into very small pieces. Let these simmer on low heat in olive oil. Add oregano, thyme, rosemary and chili flakes. Keep stirring until the onion and garlic are cooked (no browning)
Add tomato paste and chopped cherry tomatoes. Cook this on medium heat and stir regularly. Add olive oil and salt if needed
Bring some water to a boil, add salt and cook the pasta
Cook the chipolata in a pan. Cut them into smaller pieces towards the end
Drain the pasta (about 1 min before they’re fully cooked). Save some pasta water
Add the pasta to the sauce and stir on medium heat. Add the pasta water (about 1/2 cup) and keep stirring. Add parmesan cheese, basil, olive oil and the sausage pieces
Top it of with some fresh burrata, pepper and more olive oil
