Oven roasted carrots w/ feta and za'atar

INGREDIENTS

  • Multicolored carrots
  • Za’atar
  • Oregano
  • Sesame seeds
  • Greek yoghurt
  • Feta
  • Lime juice
  • Flat parsley
  • Olive oil
  • Salt & pepper
RECIPE
  • Preheat the oven to 180°C (grill and hot air)
  • Clean and cut the carrots length-wise. Season them with salt, pepper, za’atar, oregano and olive oil.
  • Cook the carrots in the oven on a baking sheet for at least 20 min. Stir halfway and check for tenderness
  • For the sauce, mix some greek yoghurt and feta cheese in a blender
  • Add honey, salt, pepper and lime juice to taste
  • Spread the sauce onto a plate and place the carrots on top
  • Top it of with flat parsley, almond flakes, za’atar and some olive oil
