Oven baked salmon w/ tomatoes

INGREDIENTS
  • Salmon
  • Cherry tomatoes
  • Zucchini
  • Lime
  • Basil
  • Thyme
  • Oregano
  • Rosemary
  • Olive oil
  • Salt & pepper
RECIPE
  • Cut the veggies and toss them with some olive oil, the dried herbs, salt and pepper. Put this in the oven for 10-15 min at 180°C (air & grill)
  • Season the salmon with the herbs, salt and pepper on both sides. Cook this in a pan with olive oil until both sides have browned
  • Transfer the salmon from the pan to the oven tray with the veggies and cook it for an additional 10 min at the same temperature
  • When it’s done, finish it off with some olive oil, fresh basil and a little bit of lime zest
