Cut some white onion. Cook it in a pan with olive oil, thyme, oregano, rosemary on medium heat
Add the minced meat to the pan and cook it on high heat. Add tomato paste and season to taste
Preheat the oven at 140°C
Slice the potatoes and eggplant in rounds. Try to make every slice the same thickness
Place the minced meat in an oven dish. Add the potatoes and eggplant on top (see second picture). Season it with salt, pepper, olive oil, oregano and rosemary
Make a bechamel cheese sauce: melt some butter in a pot. Add a tablespoon of flour and mix this thoroughly. Add milk and keep stirring. Stir until it stars to thicken and add grated cheese, salt, pepper and nutmeg
Cover everything with the cheese sauce. Bake it in tho oven for 40 min at 180°. Cover it with a lid at first and take it of for the last 10 minutes
