Morrocan inspired meatballs

INGREDIENTS
  • Couscous
  • Minced meat
  • Tomatoes
  • Canned tomatoes
  • Onion
  • Garlic
  • Carrot
  • Zucchini
  • Chickpeas
  • Cumin
  • Curcuma
  • Paprika powder
  • Chili flakes
  • Salt & pepper
  • Olive oil
RECIPE
  • Dice an onion and cook it in olive oil with some chopped garlic. Add paprika powder, cumin and curcuma to the pan and let this simmer
  • Add chopped tomatoes and canned tomatoes and chopped carrots to the pan and continue to let this simmer
  • Mix the minced meat with some salt, pepper, cumin and paprika powder. Roll the minced meat into small meatballs. Cook them for 15 min at 180°C or in a pan with olive oil until they’re halfway cooked
  • Chop up a zucchini. Add this to the sauce with the meatballs. Let this simmer until everything is cooked
  • Cook the couscous according to the instructions on the packaging
  • Add the chickpeas to the sauce and season one last time. Top everything of with some flat parsley
