Morrocan inspired chicken in tomato sauce

INGREDIENTS
  • Chicken (use your favourite cuts) 
  • Carrot
  • Canned tomatoes
  • Couscous
  • Raisins
  • Flat parsley
  • White onion
  • Garlic cloves
  • Olives
  • Lemon
  • Chicken stock
  • Cumin
  • Curry powder
  • Coriander powder
  • Paprika powder
  • Butter
  • Olive oil
  • Salt & pepper

RECIPE

  • Mix some olive oil with paprika powder, cumin, coriander powder, chili flakes, pepper, salt and grated garlic
  • Add the mixture to the raw chicken and let it marinate for 30 min to 1 hour
  • Cut onion, garlic and carrots into big pieces
  • Heat up a big pot with olive oil and braise the chicken. Once browned on all sides, take it back out from the pan
  • Add more olive oil and butter to the pan. Put the onion, garlic and carrots in the pot and let it simmer
  • Add cumin, coriander powder, paprika powder, salt and pepper. Simmer until fragrant on medium-low heat
  • Add the canned tomatoes and add about 1 cup of chicken stock. Let this simmer
  • Add the chicken back to the sauce along with olives, 2-3 slices of lemon. Simmer for at least 1 hour with a lid on low heat.
  • Cook the couscous according to the instructions on the packaging
  • Add flat parsley and raisins to the cooled of couscous and season with curry powder, salt & pepper
  • Serve together and add some flat parsley to the chicken
