Minced meat stuffed tomatoes

INGREDIENTS
  • Minced meat
  • Whole tomatoes
  • Canned tomatoes
  • Zucchini
  • Potatoes
  • Milk
  • Basil
  • Oregano
  • Rosemary
  • Thyme
  • Shallot
  • Butter
  • Salt & pepper

RECIPE

  • Cut the top from the tomatoes and empty the seeds with a spoon. Save the insides
  • Chop a shallot
  • Mix the minced meat with the shallot, some oregano, rosemary, thyme, salt and pepper
  • Put the minced meat in the the tomatoes
  • Put everything in an oven dish and drizzle some olive oil on top. Cook it in the oven for 40 min on 180°
  • Chop another shallot and let it simmer in a pot with olive oil
  • Add some rosemary, thyme and oregano
  • Add the tomato insides and canned tomatoes to. Let this simmer, add basil at the end
  • Cut the zucchini, put it in an oven dish. Season with salt, pepper, oregano. Add olive oil and cook this in the oven for at least 15 min
  • Boil the potatoes in salted water and drain them when fully cooked
  • Mash the potatoes and make a purée with butter and some milk. Season with salt, pepper and nutmeg
