Cut up the eggplant and zucchini into big chunks. Put them in an oven dish, season with salt and pepper and drizzle some olive oil on top. Add rosemary, thyme and oregano, mix and cook this for 20 minutes at 160°C
Chop a small onion, cook it in olive and add rosemary, thyme and oregano. Let this simmer on medium heat. Crank up the heat and add the minced meat until it’s nice and brown. Season with salt and pepper
Take the veggies out of the oven. Add cherry tomatoes, the minced meat and pieces of mozzarella cheese. Cook everything for 20 minutes at 180°C (heat & grill)
