Minced chicken noodle salad

INGREDIENTS
  • Minced chicken meat
  • Angel hair noodles
  • Snap peas
  • Mushroom
  • Lime
  • Ginger
  • Shallot
  • Cilantro
  • Mint
  • Fish sauce
  • Sesame oil
  • Sugar
  • Granulated sugar
  • Chilli flakes
  • Sesame seeds
  • Salt & pepper
  • Olive oil
RECIPE
  • Bring a big pot of water to a boil. Add the noodles and cut of the heat. Let the noodles sit in the water and taste to see when they’re ready. Drain the noodles and rinse the with cold water
  • Chop a shallot and cook it in olive oil with grated ginger on medium heat. Add chilli flakes and the minced meat and chopped mushrooms to the pan and cook it
  • Add some soy sauce, fish sauce, sugar, sesame oil, lime and sugar to taste
  • If the pieces of cooked minced meat you can make them smaller by putting it in the blender and blending it until you have the size you want
  • Boil another pot of water. Add salt and cook the snap peas until they’re cooked but still crunchy
  • Mix everything and add chopped cilantro and mint. Top it with some sesame seeds and more chilli flakes
