Chop a shallot and cook it in a pan with olive oil. Add chopped yellow bell pepper and taco seasoning. Let this simmer until everything is cooked
Make small holes in the sweet potato with a fork and place it in the microwave for 7-10 min (depending on the size of the sweet potato). Let it cool and cut open the top
Drain the lentils and add them to the pan with onion and bell pepper. Stir and season to taste
Salsa: chop tomatoes, a shallot and cilantro and mix it up. Season with salt, pepper and chilli flakes. Add a small amount of olive oil and lime to taste
Guacamole: mash the avocado and add a chopped shallot, diced tomatoes and cilantro. Season with salt, pepper and chilli flakes. Add lime juice to taste
Season the sour cream with some salt, pepper and lime juice
Fill the potatoes with the lentil mixture and put it back in the microwave for 1 min to make sure everything is hot
Garnish with some more cilantro, the salsa and the guacamole
