Mexican inspired loaded sweet potato

INGREDIENTS
  • Sweet potato
  • Canned lentils
  • Avocado
  • Lime
  • Cilantro
  • Tomatoes
  • Shallot
  • Sour cream
  • Taco seasoning
  • Yellow bell pepper
  • Chili flakes
  • Salt & pepper
  • Olive oil
RECIPE
  • Chop a shallot and cook it in a pan with olive oil. Add chopped yellow bell pepper and taco seasoning. Let this simmer until everything is cooked
  • Make small holes in the sweet potato with a fork and place it in the microwave for 7-10 min (depending on the size of the sweet potato). Let it cool and cut open the top
  • Drain the lentils and add them to the pan with onion and bell pepper. Stir and season to taste
  • Salsa: chop tomatoes, a shallot and cilantro and mix it up. Season with salt, pepper and chilli flakes. Add a small amount of olive oil and lime to taste
  • Guacamole: mash the avocado and add a chopped shallot, diced tomatoes and cilantro. Season with salt, pepper and chilli flakes. Add lime juice to taste
  • Season the sour cream with some salt, pepper and lime juice
  • Fill the potatoes with the lentil mixture and put it back in the microwave for 1 min to make sure everything is hot
  • Garnish with some more cilantro, the salsa and the guacamole
