Meatloaf w/ veggies & mashed potatoes

INGREDIENTS
  • Minced meat
  • 1 egg
  • Breadcrumbs
  • Ketchup
  • Shallot
  • Carrots
  • Broccoli
  • Potatoes
  • Bay leaves
  • Flat parsley
  • Chives
  • Milk
  • Butter
  • Salt & pepper
RECIPE
  • Mix the minced meat with a chopped shallot, a tablespoon of ketchup, 1 egg and breadcrumbs. Gradually add the breadcrumbs until the mixture sticks together nicely. Taste it and season with salt & pepper
  • Knead the minced meat into a meatloaf shape and put it in an oven dish. Add some pieces of butter on top and cook it int the oven for at least 30 min at 180°C. Cut the middle to check if it’s cooked. If not, cook it for a while longer
  • Cut the potatoes and put them in salted water. Bring the water to a boil with the potatoes and check regularly to see when they’re done. You can choose to peel your potatoes, I like my mashed potatoes with the skin
  • Cut the carrots into thin slices and chop a shallot. Melt some butter in a pot. Add the shallot, carrots and bay leaves to the pot and let this simmer on low heat with a lid. Taste when ready and season w/ salt & pepper
  • Cut the broccoli and cook it in salted water. Drain when cooked but still firm, put it back in the hot pan to evaporate the left-over water
  • Drain the potatoes. Add them back to the pot and mash them. Add a big chunk of butter and a dash of milk. Mix this and add more milk or butter if the mashed potatoes aren’t smooth enough. Taste this and season it with salt & pepper. Add chopped flat parsley and chives for a nice taste
