Meatball & burrata pasta

INGREDIENTS
  • Shell pasta
  • Minced meat
  • Passata
  • Cherry tomatoes
  • Red onion
  • Garlic
  • Zucchini
  • Parmesan cheese
  • Pine nuts
  • Burrata
  • Fresh basil
  • Dried rosemary, thyme and oregano
  • Olive oil
  • Salt & pepper
RECIPE
  • Mix the minced meat with 1/4 chopped red onion. Add dried oregano, thyme, grated parmesan cheese, pine nuts and rosemary to taste. Season with salt & pepper
  • Roll the minced meat into balls & cook in a pan with olive oil. Remove once browned on all sides
  • In the same pan, cook 1/2 chopped red onion and 1 clove of garlic. Let this simmer on medium heat without letting it brown. Add the oregano, thyme and rosemary
  • Add chopped cherry tomatoes and the passata to the pan. Season with salt and pepper, add the meatballs back to the sauce and let this simmer until the meatballs are cooked
  • Boil some water and cook the pasta
  • Cut the zucchini into really thin slices (I used a mandoline). Mix them with salt, pepper, olive oil and some lime juice. Let this sit for 5-10 minutes while you preheat the oven at 180°C
  • Cook the zucchini for 10 min at 180°C in the oven
  • Drain the pasta and mix it with the sauce & meatballs. Add parmesan cheese burrata & fresh basil
