INGREDIENTS
- Canned lentils
- Mushrooms
- Broccoli
- Coconut cream
- Red curry paste
- Cilantro
- Lime
- Red onion
- Garlic
- Olive oil
- Salt & pepper
RECIPE
- Cut some red onion and garlic. Cook it in a pan with olive oil on medium heat. Add red curry and cook until fragrant
- Add chopped mushrooms and broccoli. Cook this until the broccoli is tender, add a little bit of water if the broccoli dries out too much
- Add lentils and the coconut cream. Let it simmer and taste. Season with salt and pepper if needed
- Top it of with cilantro and lime juice
