Lentil curry

INGREDIENTS

  • Canned lentils
  • Mushrooms
  • Broccoli
  • Coconut cream
  • Red curry paste
  • Cilantro
  • Lime
  • Red onion
  • Garlic
  • Olive oil
  • Salt & pepper

RECIPE

  • Cut some red onion and garlic. Cook it in a pan with olive oil on medium heat. Add red curry and cook until fragrant
  • Add chopped mushrooms and broccoli. Cook this until the broccoli is tender, add a little bit of water if the broccoli dries out too much
  • Add lentils and the coconut cream. Let it simmer and taste. Season with salt and pepper if needed
  • Top it of with cilantro and lime juice
