Lamb meatballs w/ baba ganoush

INGREDIENTS

  • Minced lamb meat
  • Eggplant
  • White onion
  • Oregano
  • Breadcrumbs
  • Garlic
  • Parsley
  • Tahini
  • Lime
  • Greek yoghurt
  • Mint
  • Chives
  • Pomegranate seeds
  • Cayenne pepper
  • Salt & pepper
  • Olive oil 

RECIPE

  • Preheat the oven to 200°C
  • Poke some holes with a fork in the eggplants. Generously coat with olive oil and salt. Cook this in the oven until completely softened
  • Wrap some tine foil around a head of garlic. Put this in the oven along with the eggplant
  • Take the eggplant and garlic from the oven and let them cool 
  • Mix the minced meat with chopped onion, minced garlic, cayenne pepper, salt & pepper. Roll the mixture into meatballs and cook them in a pan with olive oil
  • Remove the insides from the eggplant, mix this with some cooked garlic, tahini, lemon juice, greek yoghurt, salt & pepper
  • Serve the baba ganoush with the meatballs. Garnish with pomegranate seeds, mint, chives
