INGREDIENTS
- Minced lamb meat
- Eggplant
- White onion
- Oregano
- Breadcrumbs
- Garlic
- Parsley
- Tahini
- Lime
- Greek yoghurt
- Mint
- Chives
- Pomegranate seeds
- Cayenne pepper
- Salt & pepper
- Olive oil
RECIPE
- Preheat the oven to 200°C
- Poke some holes with a fork in the eggplants. Generously coat with olive oil and salt. Cook this in the oven until completely softened
- Wrap some tine foil around a head of garlic. Put this in the oven along with the eggplant
- Take the eggplant and garlic from the oven and let them cool
- Mix the minced meat with chopped onion, minced garlic, cayenne pepper, salt & pepper. Roll the mixture into meatballs and cook them in a pan with olive oil
- Remove the insides from the eggplant, mix this with some cooked garlic, tahini, lemon juice, greek yoghurt, salt & pepper
- Serve the baba ganoush with the meatballs. Garnish with pomegranate seeds, mint, chives
