INGREDIENTS
- Arugula
- Halloumi
- Beetroot
- Red bell pepper
- Apple
- Cucumber
- Spring onion
- Oregano
- Thyme
- Mint
- Lime
- Mustard
- Honey
- Salt & pepper
- Olive oil
RECIPE
- Cut all the veggies and the halloumi
- Cook the halloumi a pan without oil. Add thyme and oregano and cook until browned on both sides
- Mix the beetroot with mint, spring onions, olive oil, lime juice, salt and pepper
- Make the vinaigrette with mustard, olive oil, honey, lime juice, spring onion and salt and pepper
