Halloumi & beetroot salad

INGREDIENTS
  • Arugula
  • Halloumi
  • Beetroot
  • Red bell pepper
  • Apple
  • Cucumber
  • Spring onion
  • Oregano
  • Thyme
  • Mint
  • Lime
  • Mustard
  • Honey
  • Salt & pepper
  • Olive oil
RECIPE
  • Cut all the veggies and the halloumi
  • Cook the halloumi a pan without oil. Add thyme and oregano and cook until browned on both sides
  • Mix the beetroot with mint, spring onions, olive oil, lime juice, salt and pepper
  • Make the vinaigrette with mustard, olive oil, honey, lime juice, spring onion and salt and pepper
