Grilled veggie & burrata salad

INGREDIENTS
  • Zucchini (green & yellow)
  • Eggplant
  • Sun-dried tomatoes
  • Arugula
  • Burrata cheese
  • Basil
  • Salt & pepper
  • Cayenne pepper
  • Olive oil
  • Balsamic vinegar
RECIPE 
  • Cut the zucchini & eggplant into thin slices. Heat up a grill and cook all of the slices until slightly browned
  • Mix the cooked veggies and season with salt, pepper, olive oil and a little bit of balsamic vinegar
  • Mix the arugula with the veggies. Add fresh basil and top it of with burrata cheese
