Green beans & tarragon meatballs

INGREDIENTS
  • Minced meat
  • Green beans
  • Tarragon
  • Shallot
  • Cream
  • Bimi broccoli
  • Salt & pepper
  • Butter
RECIPE
  • Season the minced meat with salt and pepper, add a chopped shallot. Roll it into meatballs and cook them in a pan with butter
  • Clean the bimi broccoli. Put them on a baking sheet, season with olive oil, salt and pepper. Cook this for at least 15 min at 180°C in the oven or until tender
  • Cut the tips off the green beans. Cut them in two and cook them in boiling water (with salt) until tender
  • Add the heavy cream to the pan with the meatballs, add a handful of tarragon leaves and the green beans. Let this simmer, season with salt and pepper
