INGREDIENTS
- Eggplant
- Yellow bell pepper
- Cucumber
- Tomatoes
- Feta cheese
- Red wine vinegar
- Chili flakes
- Oregano
- Olive oil
- Salt & pepper
RECIPE
- Cut the eggplant into thin slices. Cook them in a pan with olive oil. Season them with salt, pepper and oregano
- Cut the tomatoes, bell pepper and cucumber into small pieces. Mix them with olive oil, red wine vinegar, chili flakes, salt, pepper and oregano
- Add crumbled feta cheese, flat parsley and the cooked eggplant
