Ginger meatballs in a soy sauce broth

INGREDIENTS

  • Minced meat
  • Ginger
  • Garlic
  • Spring onion
  • Sesame seeds
  • Sesame oil
  • Soy sauce
  • Chili flakes
  • Cilantro
  • Chicken stock
  • Mushrooms
  • Red pointed peppers
  • Lime
  • Vermicelli noodles
  • Salt & pepper
  • Olive oil 

RECIPE

  • Mix the minced meat with grated ginger, sesame oil, sesame seeds, chili flakes. Taste and season with salt & pepper. Roll the mixture into meatballs
  • Heat up some olive oil in a pot. Sauté big chunks of ginger en garlic in the oil until fragrant (make sure they don't brown so cook on medium heat). Add the chicken stock along with a lot of soy sauce. Let this simmer for 5 minutes and remove the garlic and ginger with a sieve
  • Add the meatballs to the stock and let this simmer on medium heat. Let this simmer while you prep the veggies
  • Cut the mushrooms and red pointed pepper into bit sized pieces. Add these to the broth and let it simmer
  • Add the vermicelli noodles 5 min before serving time. Stir and taste. Add more soy sauce, salt, pepper or lime juice if needed
  • Garnish with spring onion, sesame seeds and cilantro
