Sea bream carpaccio

INGREDIENTS

  • Sea bream filet
  • Passionfruit
  • Orange
  • Lime
  • Cilantro
  • Chili flakes
  • Olive oil
  • Salt & pepper

RECIPE

  • Cut the dorade into thin slices and put it back in the fridge to cool
  • Mix some orange juice, passion fruit, lime juice and chili flakes. Don’t add too much lime if the passionfruit is already sour
  • Plate the dorade carpaccio and drizzle the mixture on top. Add some fresh cilantro and drizzle some olive oil on top. Serve with salt & pepper
