Feta & zucchini vegetable lasagna

INGREDIENTS
  • Zucchini
  • Minced meat
  • Feta cheese
  • Tomatoes
  • Sun-dried tomatoes
  • Oregano
  • Rosemary
  • Basil
  • Parsley
  • Gruyere cheese
  • Salt & pepper
  • Olive oil 
RECIPE
  • Cut the zucchini’s length-wise into thin strips. Cover all the strips with salt and let them sit for 10 min. Pat them dry after that
  • Grill the zucchini slices
  • Blend feta with tomatoes (without the seeds & juice), sun-dried tomatoes, basil, parsley, salt, pepper, oregano and some rosemary
  • Cook the minced meat. Season with salt and pepper
  • Start with a zucchini layer, add a layer of feta spread on top of it. Keep building and alternate between layers for the minced meat. Finish it with grated cheese
  • Bake the lasagna for 30-40 min in a 180 degree oven
