Cut the zucchini’s length-wise into thin strips. Cover all the strips with salt and let them sit for 10 min. Pat them dry after that
Grill the zucchini slices
Blend feta with tomatoes (without the seeds & juice), sun-dried tomatoes, basil, parsley, salt, pepper, oregano and some rosemary
Cook the minced meat. Season with salt and pepper
Start with a zucchini layer, add a layer of feta spread on top of it. Keep building and alternate between layers for the minced meat. Finish it with grated cheese
Bake the lasagna for 30-40 min in a 180 degree oven
