Feta & tomato oven roasted meatballs

INGREDIENTS
  • Minced meat (pork-veal mix) 
  • Asparagus
  • Arugula
  • Shallot
  • Tomatoes
  • Feta cheese
  • Parmesan cheese
  • Oregano
  • Thyme
  • Lime
  • Olive oil
  • Salt & pepper
RECIPE
  • Preheat the oven to 180°C
  • Chop a shallot and mix it with the minced meat. Add oregano, thyme, salt & pepper to taste
  • Roll the minced meat into meatballs and add them to a baking dish. Drizzle with olive oil. Cook in the oven for 10 minutes 
  • Break up some feta, chop the tomatoes and add these to the meatballs. Drizzle more olive oil on top and season with oregano, thyme, salt & pepper. Cook this in the oven for about 15 more minutes, until the meatballs have browned and are cooked through
  • Put the asparagus on a baking sheet. Season with olive oil, salt & pepper and bake them in the oven for 15 min (simultaneously with the meatballs) 
  • Put the arugula in a bowl. Drizzle some olive oil on top and add lime juice, a lot of grated parmesan cheese, salt and pepper
