Feta & merguez couscous

INGREDIENTS
  • Couscous
  • Merguez sausages
  • Cherry tomatoes
  • Spring onion
  • Feta cheese
  • Cucumber
  • Radishes
  • Flat parsley
  • Avocado
  • Olive oil
  • Lime
  • Curry powder
  • Paprika powder
  • Cumin powder
  • Chili flakes
  • Salt & pepper
RECIPE
  • Cook the couscous according to the instructions on the packaging. Mix it with the dry spices, salt and pepper to taste. Let this cool for a bit
  • Bake the merguez sausages in a pan with olive oil. Cut the into smaller pieces when cooked and let it cool
  • Chop all the veggies and mix them in the couscous
  • Make a vinaigrette with olive oil, lime and honey. Season with some salt and pepper and add some more dry spices. Mix this in the couscous or keep it on the side
  • Add the merguez hits and crumbled feta to the couscous and top it of with pieces of spring onion and flat parsley
